Hello, I'm Nicole - author and chef for balanced bite
By day I am an Interior Designer for a full service architecture firm in St. Louis. I have a wonderful fiancé, Josh, who is a chiropractor and professional bowler. We live the fast and furious life. Most days we’re lucky if we even get to sit down and hear ourselves think, and it’s a miracle if we think about what we’re going to eat.
Our story & how it all began
It’s hard to think about food, or meal prepping/planning when you are flat out busy. As a female who works full-time the last thing I want to hear is “what’s for dinner?” As a couple, we struggle to find balance with food. We ordered out at least half the nights in any given week and it was never anything healthy. It was usually pizza, chinese, mexican, or Buffalo Wild Wings or whatever else DoorDash would deliver in 30 minutes that I didn’t have to make or think about. In hindsight I’m not sure how we didn’t gain weight faster than we did. Eventually I couldn’t fit into my pants comfortably. The breaking point for us was when we took a trip to Las Vegas for a bowling tournament that Josh was competing in. The day he was competing, he couldn’t fit into his normal bowling pants and had to drop what he was doing to drive 40 minutes across town to find a pair of pants that would fit him. When we got back from that trip we decided to hire a dietitian. We needed someone to tell us realistically how many calories we could eat in a day and to give us some ideas on how to eat healthier with such a hectic lifestyle. balanced bite is a byproduct of all of that. I started the blog out of my love for cooking and food but also to help other people out there that struggle like us to eat healthy and lose weight because they’re so darn busy. The struggle is real and you just have to know that you aren’t alone.
